Kocomo's 甘酒
White Rice Amazake

Non sake based amazakes can be either coarse or smooth. Kocomo's Amazake has a silky smooth consistency with a luxuriously deep flavour that is both sweet and tangy. Using our award-winning and ecologically grown Kinumusume and Himenomochi mochi rice, this handmade amazake is incredibly smooth and full of flavour. All our rice varieties are grown in harmony with nature, we add nothing synthetic or poisonous and our own mix of completely natural fertilizer is spread well before planting. Our rice fields hum with the sounds of wildlife; dojo, salamander, hotaru, praying mantis, crickets, turtles, frogs, and herons all call our fields home. Amazake is a traditional sweet Japanese drink made from fermented rice With a centuries long tradition, Amazake dates from the Kofun period. It is part of the family of traditional Japanese foods made using the koji mold (Aspergillus oryzae), which is also used in making misosoy sauce, and sake.

There are various recipes for amazake, some of which have been used for hundreds of years. In the recipe we use, kōji is added to steamed then cooled rice, causing enzymes to break down the carbohydrates into simpler unrefined sugars. As the mixture incubates, sweetness develops naturally. Kocomo's Amazake does not need diluting and is best straight from the bottle.

Amazake can be enjoyed as a beverage, dessertsnack, natural sweetening agent, baby food, salad dressing, or base for a smoothie

Amazake is believed to be very nutritious. It contains vitamin B1, B2, B6, folic acid, dietary fiber, oligosaccharide, cysteine, arginine and glutamine. In addition to supposedly being good for the skin and beneficial for intestinal flora, it is often considered a hangover cure in Japan.
